Creamy Spinach Sauce: Perfect to Pair with my Sourdough Pasta 🍝

Indulge in a plate of our sumptuous sourdough pasta tonight! If you’ve already got some or are planning to, complement it with my exclusive creamy spinach sauce. It’s quick, simple, and incredibly flavorful!


Creamy Spinach Sauce Recipe Ingredients:

• 3 tbsp olive oil

• 3+ garlic cloves (remember, garlic is best measured w/the heart)

• 2 tsp dried oregano

• 1 tsp red pepper flakes

•1 can petite diced tomatoes

• 1/4 cup sun-dried tomatoes in oil, chopped (optional)

• 1 cup heavy whipping cream

• 1/4 cup Pecorino Romano (personal favorite ) or Parmesan

• 2 tbsp flour

• 1-2 handfuls fresh baby spinach

• Salt and pepper, to your preference

• Fresh chopped parsley and/or basil (optional)


Directions:

1. In a large skillet, heat olive oil over medium-high.

2. Sauté oregano, red pepper flakes, garlic, sun-dried tomatoes (if using) until the aromatic scent of garlic wafts through.

3. Introduce the diced tomatoes and reduce heat to medium, allowing them to simmer for 5 minutes.

4. Meanwhile, whisk together the heavy whipping cream, Pecorino Romano, and flour.

5. Gradually add the creamy mix to the skillet. Reduce the heat and let it gently simmer for about 15 minutes to thicken, giving it an occasional stir.

6. Stir in the baby spinach, letting it wilt into the sauce.

7. Season with salt and pepper to taste.

8. Finally, mix in your Cooked Sourdough Pasta, ensuring it’s well-coated, garnish with fresh parsley and/or basil, serve immediately.
